Shiitake and Chicken Soup
Ingredients: garlic – 2 cloves; coriander – 4 shoots; ground black pepper; vegetable oil – 1 tbsp. l .; chicken stock – 1 l; shiatke (dried) – 5 pcs.; fish sauce – 1 hour l .; chicken fillet – 120 g; green onions – 1 bunch; sprigs of coriander for serving.
Preparation: Shiitake soaked in cold water for 20 minutes, fold and cut into large slices. In a mortar grind garlic, shoots and leaves of coriander and peppercorns in homogeneous mass. Heat oil in a wok pan, add spicy mass and fry, stirring, 1 minute. Pour in the broth, mushrooms and fish sauce, stir and simmer for 5 minutes. Add the chicken, cut into strips, reduce the heat so that the liquid barely boils, and keep on fire for another 5 minutes. Sprinkle the surface of the dish with green with onions and garnish with coriander sprigs.
